摘要

   本论文以冬枣为材料,采前以不同浓度(0.5和1mol/L)的INA处理,0℃低温贮藏,定期观察统计转红情况,并对其品质指标进行了分析。

   试验结果表明,采前INA处理对冬枣品质指标有较明显的影响,采前INA处理显著促进了冬枣的着色,其中1mmoL/L 的作用效果更显著。采前1mol/LINA处理对冬枣的总酸积累及代谢有影响,促进了酸积累增加;对冬枣可溶性糖、花青素、类黄酮含量的保持效果最好。采前0.5mol/LINA处理提高了冬枣的抗坏血酸含量,提高了冬枣的营养品质。

Abstract

   In this paper, the winter jujube as experimental material was treated preharvest with different concentrations of "INA(0.5和1mol/L)", storaged 0 ℃, colour turning red index was checked statistically in regular , its quality indicators was analyzed.

   The results showed that there is marked effect on quality of winter jujube that "INA" treatment before harvesting,which promoted winter jujube coloring, the treatment of 1mmoL/L INA present better effect than that of 0.5mmoL/L INA. Treatment of 1mmoL/L INA increaseed acid acumulating, maintained higher content of sugar, anthocyanin and flavonoid. The treatment of 0.5mmoL/L INA enhanced ascorbic acid content of winter jujube, the nutritional quality of jujube was improved.
